Very bright colour, almost clear. Fruity, dry, elegant, with a pleasant acidity and delicate bouquet.

Vinification

Grapes are pressed immediately after harvest. Controlled temperature fermentation at 16°C, no malolactic fermentation. On lees until mid January. Bottled in February.

Recommendation

Goes well with all kinds of vegetables and oysters – it does not always have to be champagne, Sangiovese Bianco is also an elegant companion.
